Neapolitan pizza recipe recommended for 4 people:
In a mixing bowl, combine the water and salt to fully dissolve the salt. Add all the flour and the yeast, then mix the water with the flour using folding motions from the outside of the bowl towards the center until you form a smooth ball.
Let the dough rest for about ten minutes on the kitchen counter, covered with a bowl. Do a series of a few folds / Cover for another ten minutes / Do another series of folds / Cover the bowl with plastic wrap.
Let it rise for 12 hours at room temperature (around 23 degrees). Then, put the dough in the fridge for another 12 hours.
Divide your dough into 4 pieces of about 250g each, and shape them into small balls (bring the outside of the dough towards the inside and seal it well to create a smooth ball).
You can now leave your dough in the fridge and take it out 2-3 hours before making your pizzas (ideally no more than 36 hours).
